    How to Make Chili Beans and Rice

    When only down-home cooking will hit the spot, get out the beans and rice, and season them into a delicious one pot meal. Use whatever canned beans you prefer for a quick method that will reduce the preparation time to less than one hour. Add the seasonings of your choice to make chili beans and rice that your family will request often. Double the recipe and you will have leftovers for another simple meal. This recipe serves four.     • Heat oil in a large frying pan on medium-high heat.

    • Add the onions and garlic to the hot oil. Stir and cook until they are soft and translucent.

    • Add the ground meat and stir often to break the meat up.

    • Add the parsley and cumin to the ground meat while it cooks. After the meat has cooked through, add the tomatoes and green chilies.

    • Drain the beans and add to the meat mixture. Season with salt and pepper to your desired taste.

    • Simmer the uncovered ingredients for approximately 10 minutes, stirring as it simmers to keep it from burning.

    • Spoon the cooked rice onto a serving platter. Ladle the meat mixture over the rice and serve immediately.

    A pot of chili makes a great meal. On a cold day, a bowl of steaming, spicy chili with a handful of oyster crackers will warm you all the way to your toes. On a hot day, a ladleful of chili from the non-house-heating crock pot poured over a plate full of tortilla chips makes wonderful nachos. Chili can be made with inexpensive ingredients and it freezes well. It's also easy to make, so kids and novice cooks can make a satisfying meal in very little time. Add this to my Recipe Box.


    • Peel the onion and chop it into small pieces.

    • Combine the chopped onion, the ground meat (ground beef or ground turkey, whichever you prefer), and the chili seasoning in the pot and cook over medium heat. Stir occasionally until meat is browned. If you want add some extra chili powder or cumin for more "heat," now is the time.

    • Once the meat is browned, add the canned tomatoes and tomato sauce. Open and drain the can of kidney beans and add to the pot.

    • Turn the heat down to "low." Let the chili simmer for at least 30 minutes, stirring occasionally; letting it simmer for an hour is better.

Chili dogs are a staple in the comfort food category, and can be a versatile base for many additional toppings including sauerkraut or chopped onions.     • Heat 2 tablespoons of olive oil in a large saucepan until it is thin in consistency, indicating it is hot. Add 1 small onion, chopped fine. Cook the onion until it starts to turn translucent, then add 1 diced garlic clove. Cook the garlic for one to two minutes.

    • Add 1 pound of ground beef and cook it until it is fully browned. Drain any grease from the pan after the beef is browned. Mix in 1 tablespoon chili powder and 2 teaspoons of ground cumin. Blend 1 tablespoon of classic yellow mustard, a 6 ounce can of tomato paste and 1 cup of beef broth with the meat.

    • Bring the mixture to a slight boil over medium-high heat. Lower the temperature to medium-low and simmer for 20 minutes. Stir the chili periodically and turn the heat off when it starts to thicken.

    Pork Green Chili Recipe

    All chilies start off green and then end either yellow or red. A standard food in New Mexico is Hatch chili, which uses peppers with a green tinge and tastes fresh. Both spicy and flavorful, the dish is most commonly made with pork. Though there are several regional variations on the ingredients, there are several key spices and vegetables that are included in all recipes. This stew is simple to prepare at home, and once readied, can be left to simmer for several hours, filling the whole house with a robust scent sure to impress both friends and family.     • Preheat the oven to 400 degrees F. Place the peppers on the baking sheet and insert it into the oven. Bake them until they are brown, for about 10 minutes, then remove the sheet from the oven and set it aside.

    • Cool the peppers until they are able to be handled comfortably. Peel off the skin and remove the top and seeds. Slice the peppers and set them aside.

    • Heat the olive oil in the large pot on a stove top set to medium-high. Add the onion and garlic and stir constantly to caramelize for several minutes.

    • Add the green chili peppers, oregano and cumin to the pot and saute for 2 to 3 minutes, stirring well.

    • Pour in the chicken stock, pork and lime juice. Stir the stew well and reduce the heat so the liquid continues to simmer. Simmer for 30 minutes.

    • Sprinkle in salt and pepper to taste. Simmer for another 10 minutes.

    • Serve with tortilla chips and dried chili peppers on the side.

    Low-Sodium Chili Recipe

    Manufacturers of canned chili add salt for flavor, rendering these inedible for those with medical conditions requiring a low-sodium diet. By making chili, the ingredients used can be controlled, including the amount of added salt. Add this to my Recipe Box.


    • Read the labels on any packaged product added to the chili. Canned vegetables, broth, condiments and frozen foods with added sauces can all hide added sodium. Avoid using these in a low-sodium chili recipe. Choose no-salt-added canned varieties or fresh or frozen ingredients instead. Omit additional salt in the recipe and add extra seasonings and spices such as onion, chili and garlic. Watch out for packaged chili mixes or chili powder seasoning with salt added to it. Some brands of chili spice are a combination of ground chili peppers, salt and other ingredients. Do not use these in low-sodium chili, but opt for ground chili powder without other ingredients.

    • Add a dash of lime juice, freshly chopped green onions or cilantro to chili just before serving to increase the flavor. Before putting the ingredients into a slow cooker or saucepan, grill or roast them to bring out the flavor. Increasing the flavor in a recipe reduces the need to add salt. Topping low-sodium chili with tortilla chips or shredded cheese is not recommended as these often have high amounts of sodium.

    • Combine 2 tbsp. olive oil with 4 tsp. minced garlic and 2 cups chopped onions in a large, heavy-bottomed saucepan. Cook for five minutes over medium-high heat until the vegetables are translucent. Add 1/4 cup ground chili powder, 2 tbsp. ground cumin and 3 lbs. cubed beef stew meat or ground beef. Cook for 10 minutes over medium-high heat to brown the meat on all sides. Remove the ingredients from the saucepan and transfer to a slow cooker. Add 1 cup water, 4 cans of no-salt chopped tomatoes, 2 cans of no-salt pinto or black beans and 10 oz. frozen yellow corn. Cover and cook over low heat for eight to 10 hours.

    We are well into the Holiday Season with lots of cheer and office Parties in the planning. Sometimes we are required to bring food or snacks to the parties so everyone contributes something for the cause and sometimes we draw names for each employee and bring small gifts. Of course we feel that we should bring some small gifts or token. I personal like to make some thing special or souvenir for holiday party. This time I will share my "Home made pickled chili's recipe. It is very simple, easy and economical. I use old wine bottles for storing the chili's and decorate them with Christmas ribbons.     • Wash Bottles very clean and dry them. Wash chilies and let them drain.

    • Boil water, add sugar and salt, let it warm then add the vinegar. Mix water with vinegar.

    • While waiting for the vinegar/water mix to cool, put the chilies in the bottles. Wear rubber gloves to avoid burning sensation on your hands. Arrange them with the colors of the pickles any way you like. When the vinegar/water is cool pour into pickle bottles. Close with caps.

    • Tie Holiday robins around the bottle neck and add a little Christmas Card. If you use Jars you can wrap them with the Cake Paper, Gift Paper Wraps and Tie them with the Ribbons'. Now they are ready to go. You can make them for donations. I make them and leave with my friends who own a restaurant for anyone who wants to buy and them proceeds can go to cancer society. You may do this for any kind of fund raising.

    How to Make Indian's Chili Chicken Recipes

    Indian chili chicken is said to have been influenced by Chinese cuisine. Whether it is a dry or wet recipe, the chicken is marinated in a number of different spices before it is cooked. The chicken is smothered in the flavors, which it absorbs. If you like it is spicy, then substitute the larger chilies for smaller ones which are more spicy. You need to allow 20 minutes to prepare the dish, and a few hours for the meat to marinate. Add this to my Recipe Box.


    • Place the cubed chicken pieces in a large bowl, and then add 1/2 tbsp. of soya sauce, pinch of salt, 1 tbsp. cornflour, half the garlic and half the green chili sauce. Mix the ingredients together thoroughly with a spoon.

    • Leave the meat to marinate in the fridge for at least an hour. If you have time then three hours would be ideal so the flavors can be absorbed.

    • Heat up a frying pan, and add a splash of oil. Then transfer the chicken into the pan. Fry the chicken for a few minutes on each side, or until the pieces are golden brown. Remove the chicken from the pan, while you fry the other ingredients. Set the chicken aside in a bowl.

    • Put the pan back on the heat, and add the remaining garlic, two to three large green chilies and 1 tsp. chili flakes if you like it spicy. Stir for two minutes, while the ingredients fry. At this point, add the diced onions and 1/2 cubed capsicum.

    • Soften the ingredients for a few minutes. Then, add the chicken back into the pan. Add the remaining ingredients into the pan - 1/2 tbsp. soya sauce, 1/2 tbsp. green chili sauce, salt and ground black pepper. Toss these around until the chicken is cooked through.

    • Finish the Indian chili recipe by taking the pan off the heat. Serve the chicken with rice and garnish with spring onions.
